You’re absolutely right that vegetarian cooking has health benefits – even cutting out meat for one day a week can reduce your saturated fat intake by 15%. That’s part of the reason I volunteer for Meatless Monday, a nonprofit public health campaign that encourages people to eat less meat, and more fruits, vegetables, beans and whole grains.
