Natives of Mexico did not have ovens like many of us have today and they would have to cook their food by an open fire pit. They would typically put their foods in iron pots and pants, and it would work like how a grill works today. Spaniards introduced the iron pots, but before that the Aztecs would steam and boil their food in two-handled clay pots which were commonly known as xoctli. To fry food, they would simply fill the pot with food and heat it over the fire. That was the most popular method of cooking and many Mexican dishes are still prepared that way.

Now that times have changed it is a lot easier to cook Mexican dishes and it takes less time. When people want to make homemade tortillas, there is an iron device that makes it a lot easier. When no one had any of these new devices it would take a long time to prepare their meals. When Mexicans tried to make masa, which is a dish with a certain type of corn that has to be ground down before you cook with it, it would take them hours.
